Deluxe Mashed Potatoes
Deluxe Mashed Potatoes
2 1/2 lbs. potatoes
4 oz. cream cheese, softened
1/2 cup sour cream
1/2 tsp. onion powder
1/2 tsp. salt, if desired
1/4 tsp. black pepper, OR
1/2 tsp. Mrs. Dash Table Blend Seasoning
Any other desired seasoning
1/4 cup oleo or butter, softened
1/4 cup sugar or Splenda (optional)
Paprika
Heat oven to 350 degrees. Peel and cut potatoes
small; boil until tender. Drain. Put everything in
large bowl (EXCEPT paprika and cheese) and mash
together. Then beat with electric mixer. Stir in
shredded cheese.
Pour into a greased 2 quart baking dish or pan.
Sprinkle with paprika. Bake for 30 minutes.

This is basically the way I make my mashed potatoes. It is great because with the sour cream and cream chease it will reheat very nicely in the microwave. I like to make extra for lunches throughout the week.

How healthy is that????? Wow
I hardly eat any potatoes as they are too calorie rich, even without sour cream, butter or cheese, and I can do without the animal fat products that clog the arteries.

Does all food HAVE to be healthy? Sometimes I get the urge for something GOOD even if it isn't healthy. I occasionally buy a Butterfinger candy bar during the rare times I can actually find them in the store.
I bake "sweets" but with Splenda instead of sugar--except when I use Splenda mixed with brown sugar so that I'm using a lot brown sugar than I would if I used it by itself.
I haven't made those potatoes in a long time. My last blood test (a couple weeks ago) was good. My blood sugar and cholesterol were down to normal levels. Yes, I do eat a lot of potatoes, because I like them and they're very filling.

Well, all of our farming and ranching ancestors must have been VERY unhealthy, because they all used to eat this kind of stuff all the time!

I think we have some confused ideas today as to what is healthy and what is not healthy. I feel better eating natural food and food products as opposed to engineered ones. I have heard the molecular makeup of margarin is very close to the molecular makeup of plastic. We have been switching back to butter.
They used to say eggs were bad for you and now they say they are good for you. I think we are safer with God's food than our distortions. Just eat healthy foods in healthy portions and stay active. I like potatoes too; they are filling and inexpensive.

Well, I have to say (since I can and will), I love mashed potatoes and has always been one of those "comfort" foods. Sometimes, I will eat them really plain and other times will make them really rich. Just depends on my "food mood." I try to be a healthy eater when I can and tend to eat bland foods but am a "sweets" eater and sometimes like rich foods. Don't we all. But I have also learned to love fruits and vegetables and include them with all my meals. So, thank you Jon-Marc. I'm going to try your recipe and I love green beans with them. Happy eating.

We tried them tonight and they were great! My wife thought they were just a bit sweet so I'll leave the sugar out next time. Thanks for the recipe Jon-Marc.

The recipe didn't originally call for sugar, but with the cream cheese (which is a bit sour for my taste) and sour cream, the potatoes were a bit too sour tasting for me. I'll change it to the sugar being (optional).
