Carrot Slaw

For those of us who actually like carrots, this is a recipe i found somewhere.

Carrot Slaw

2 cups finely shredded carrots
1/2 cup finely chopped green pepper
If you're like me and like it HOT,
substitute 1/4 cup Jalapeno peppers
1/4 cup chopped onion
1 large or two small firm apples, peeled and cut small
1 cup raisins
1 TBsps. vegetable oil or other cooking oil
2 1/2 tsps. vinegar (wine vinegar is best in my opinion)
2 TBsps. sugar or Splenda
1/4 tsp. celery seed
1/4 tsp. salt (optional)
1/2 tsp, dry mustard (Be careful! Dry mustard is hot!)

In a medium bowl, combine carrots, green pepper, onion,
apple and raisins.

In a small saucepan, combine remaining ingredients. Bring
to a boil over medium/high heat. Pour over ingredients in
bowl and toss thoroughly. Chill 2-3 hours before serving.

Adding jalepenos to either carrot or cole slaw sounds great, but you'll need a cold beer to put the fire out.
